    Well I was TRYING to get it ready by Christmas! Trouble is the yeast isn't cooperating (they must be female...) I'm not sure when the fermentation will be done, but I'm tracking it daily. As soon as it completes, it will take me 4 days to run the still and another day to bottle and label. At least this time, the labels are already approved! So the soonest we will have it ready for sale would be Dec-28, but it may be longer.

    For the Distilling Geeks out there:
    Fermentation started at 1.060 and leveled off at 1.040. This left plenty of fermentable sugar, but the fermentation slowed to a crawl. The pH was really low at 4, so I just added some buffer to raise it to about 4.8 to see if that tickles it into restarting. If it restarts, I'll let it ferment for another couple of days. Otherwise, I'll just start running it on the still.

    25-Dec-13 : OK, I couldn't wait - the alcohol was only about 3% (gotta do better than that!) but I ran the still yesterday. It's Christmas today so I'm taking the day off. I'm planning on doing runs the 26th, 27th, and 28th. Then we'll do the flavoring run with the collected spirits on the 29th. That would be the earliest we could release anything, BUT that's only if it passes Quality Control!
